simple&delicious almond ice cream


Alternatives
Since I've decided to start eating healthier, I've been finding alternatives to those not-so-healthy meals.
Today will be my first post for you on some of the food I make.
I hope you will be able to try and use some of my recipes. Hopefully they aren't too bland for you. :)

Simple&Delicious Almond Ice cream

I pretty much love ice cream of any kind, so it was not easy for me to not eat it. It is one of the easiest desserts that you can pick up from any store, gas station, restaurant, or fast food place. And you can put tons of different toppings on it to make it even tastier! Ice cream was an essential part of my life, but I've come to realize it's not the best thing to put in my body.

Good News1 I found an alternative, which may not taste just like creamy chocolaty moose tracks ice cream, but it gets the job done.

Ingredients: Original Almond Milk and two packets of Stevia
(you can also use Chocolate or Vanilla Almond Milk if you have more of a sweet tooth)
Pour almond milk into a shallow seal-able dish.
Pour stevia packets in the milk.
Stir well, so that all the stevia dissolves.
That's it!
Be sure to put the lid on and place it in the freezer for a few hours.
Once it's frozen, remove it from the container and mix it in a blender until smooth. (sorry I didn't show this part.) Sometimes it's hard to get out of the container, so you may need to defrost it on the counter or in the microwave for a little bit.
Scoop it out into a bowl and wala! A simple&delicious bowl of ice cream.
You can add topping here if want or eat it as is.

home sweet home


I love home.
And, I am so happy to back! I love my house and my family and my friends all so very much. I love the quite and the birds chirping. I love the space in my house to actually walk around. I love that I can turn my music up as loud as a want and praise the Lord without the neighbors getting mad. And, I love my bed. 

I'm sorry, my readers, for not blogging in such a long time. Life has been a bit busy these past few weeks. But, now that I'm back to a normal life again I can starting writing! . . . so happy. :)

Since I've been home I have been working a ton. (probably not as much as all you mothers out there though lol) I went from working 3-5 hours/week to 25 hours/week at my dad's shop. That's pretty big for me, but I love and feel completely blessed to work for my dad. Jonathan has set up an office there, as well, for the business he started. So now we get to see each other ALL THE TIME! Most people would ask, "Doesn't that get a little aggravating, spending almost every hour with him?" Well of course it does at moments, just like it would for any couple, but I love it! I'm so in love with that man and savor every moment!

I also turned 21 this month. . . April 13th. It was fun, Jonathan threw me a little party on my birthday because, I wanted one. Then, he ended up surprising me with a huge party the next day. It was fabulous. :) Oh, and he bought me a camera. It's awesome.

We both have memberships to the rec and have been trying to go three times a week before work. It is actually kind of fun, accept for the "getting up early" part. Other than that it makes me feel accomplished. God has blessed me with this young body and I want to keep it as healthy as I can for when it's not so young.

And, one last thing that's kind of big in my life. I'm helping with Apples of Gold at our church. For those of you who don''t know what it is...it's a woman's meeting where the mature woman of Christ mentor the new Christian woman and younger woman. It's such an amazing ministry. I took the classes a couple years ago and had a wonderful time. This time around, I am helping with the cooking demonstrations. It's a lot of fun and I get to keep the recipes afterwards! I'm sure my husband will appreciate some new yummy meals.

Well, that's all for now. Sorry if this blog was a little boring or rushed. I just needed to catch up on a few things. Hopefully I'll be able to add more devotional/demonstration/exciting blogs soon!

almost home


Only a few more hours...and we'll be off to Michigan!
Instead of flying, we decided to rent a car and drive home. It's cheaper in the long run with everything we would have had to ship home. We are renting the car around 8pm tonight, which should bring us home around 8am tomorrow morning! I can't believe we're leaving so soon!
Life has definitely been crazy these past four months, but I wouldn't take a minute back. God has taught me so much and Jonathan and I have grown closer in God and marriage. I'm really excited to see what our Lord has in store for us these next few months. I know we will hit some bumps, but I also know and trust that the Lord will be there to pick us up and lead us in the right direction. 
In our last few days out on the town Jonathan and I decided take some kissy photos in front of all the NYC sites. So if you don't want to see it...I'd stop reading now or skip to the bottom. :)
